Rotisserie Chicken and Black Bean Salad

This recipe was shared to me by my friend Johanna who recently started a Instagram (@realfoodjo) where she is sharing her real food recipes and this has easily been one of my favorite made ahead meals for a easy lunch and I love that I can use any left over rotisserie chicken so it does not go to waste. 

ROTISSERIE CHICKEN AND BLACK BEAN SALAD

You will need: 

Rotisserie Chicken

1 can of black beans, drained and rinsed 

1 cup of fresh corn kernels, drained 

4 Radishes, cut into thin slices 

2 Green onions, chopped 

1 lime, juiced 

1 Tbsp oil olive 

 1/2 cup fresh cilantro leaves, chopped 

Kosher salt + Pepper

Take all the above ingredients and mix all together in a bowl. Once everything has been mixed well, put it back in the fridge for an hour or so and then serve. I like to eat this salad with a side of avocado or guacamole with blue corn tortilla chips.
