Easy Mini Pancake Bites

My boys love eating pancakes and especially love when I make pancakes for breakfast but like most mornings, there is ever enough time for me to make them before sending the kids to school so I did a little pancake hack over the weekend and I have to say, I scored some major brownie points with the kids come Monday morning.

On Sundays, I normally do my meal prep for the week and this weekend, I decided to do a little pancake hack using my muffin pans to make mini pancake bites for the boys for a quick and easy breakfast before school. I have a recipe I like to make from scratch which I will share at the very bottom of this post or you could easily use a box mix as well. One of my favorite box mixes is actually the Market Pantry brand from Target. It is so good and always comes out super fluffy.

Now, let's talk toppings!! There are so many options when it comes to toppings for these mini pancake bites but we decided to keep it a little more simple this time around and I let the boys pick what they wanted to put into their mini pancakes and we ended up with blueberries which I always have on hand in the freezer, chocolate chips and my youngest wanted plain pancake bites so he could dip in syrup. Of course after we made all our pancake bites, I wish I had fruity pebbles on hand because YUM! That would have been so good! I will definitely have to remember for next time!

Fluffy Pancake Mix

1 cup milk

1 large egg

2 tbsp of melted butter 

1 cup of all purpose flour 

2 tsp baking powder 

2 tbsp of sugar 

1 pinch of salt 

Assorted toppings of your choice 

1. Preheat your oven to 350 degrees 

2. Spray your muffin pans so it will be easier for you to get your mini pancakes out 

3. In a bowl, mix together the flour, sugar, baking powder and salt.

4. In another bowl, mix together milk, butter and egg 

5. Pour the dry ingredients into the milk mixture and stir. Be careful to not over stir the batter.

6. Pour pancake batter into mini muffin pans and bake for 10-12 minutes or until golden brown. 

AND it's just that simple! It took us less then 30 minutes to prep everything with the help of my cute little helper and our recipe made TONS of mini pancake bites to last us the entire week or at least I hope they do! Happy Mini Pancake making!
